     Each issue, BIGGRNYU.COM 's newletter will be bringing you a terrific, healthy recipe, designed for those of us who may be monitoring our dietary intake of protein, carbohydrates and fat, or for those who are just looking for lean alternatives.   Please email us with your comments!  Send us your own favorite recipes, so we can share them with everyone!  We hope you enjoy this section of the newsletter!

 
     

        For those of you with a sweet tooth trying to maintain a low carbohydrate diet, here is an alternative to satisfy your craving for ice cream, and it's high in protein too!

Fat-Free/Low Carb Pudding

-2 servings (0.5 oz.) sugar free/fat free jello pudding (favorite flavor). 

-6 hard boiled egg whites, preferably cold or pre-refrigerated.

-1 scoop protein powder*(same flavor as pudding to enhance flavor, thicken mixture, and increase protein content)

-dash of cinnamon**

-2 drops vanilla extract**

-1 cup cold water

-1 tbsp. fat free cool whip

   
 

Combine first three ingredients in blender.  Blend for one minute at high speed.  Pour mixture into bowl.  Top with cool whip.  Serves one.  May be eaten instantly or placed in refrigerator to enhance thickness. 

 

*Optional: For those who do not want the extra protein in protein powder, you may need to add more pudding mix to enhance thickness and flavor.  This will increase the carbohydrate content.

**Vanilla and Banana Cream flavors only.

Protein: 50 grams (with protein powder, may vary)

Carbohydrates: 15 grams

Fat: 0 grams

PLEASE NOTE: This delicious dessert contains ~ 1000 mg of sodium.
